Superman has kryptonite. Me, well, I have cookies. When I
heard that Birdbath in Manhattan has
giant organic cookies (along with raspberry muffins, pain au chocolat, etc.) made
and sold in a 98% green bakery, my knees went weak and my salivary glands
kicked into overdrive. Cookie Monster tendencies aside, Birdbath offers all
inspiration as to what a retail space can be. Birdbath is a chic foodie outpost with wheatboard walls, Dakota Burl
ceilings, cork floors, zero VOC paint, and hemp-linen blend gear for the bakers
and crew. In building Birdbath, owner Maury
Rubin sought to improve on his previous green efforts (City Bakery NY and LA)
and provide customers with an environment just as eco-friendly as the food
that’s served within. The Bonded Logic insulation check out counter is a smooth touch. Pretty sweet that my work brings me to Manhattan. Next time I am there I’m making a beeline to Birdbath in the East Village…because you know I love those cupcakes cousin!
